A coffee grinder is not merely an accessory. It determines how evenly coffee is prepared for extraction and whether adjustments can be repeated as beans, weather and brewing conditions change. The right grinder must suit the brewing method and the workload.
Blade grinders and burr grinders
Blade grinders chop beans with a spinning blade and commonly produce a mixture of particle sizes. Burr grinders pass beans through a controlled gap between two burrs, allowing more consistent and repeatable adjustment. For espresso and serious brewing control, a suitable burr grinder is normally the practical choice.
Flat burrs vs conical burrs
Flat and conical describe the burr geometry. Neither shape is universally better. Results also depend on burr design and size, alignment, motor, rotational speed, adjustment mechanism, chamber and exit path. Select the complete grinder for its intended method and workflow rather than choosing from burr shape alone.
Match the grinder to the brewing method
- Espresso: needs fine, controlled adjustment because small changes can materially affect flow and extraction.
- Filter and pour-over: benefit from consistent adjustment across the required medium ranges.
- French press and similar immersion methods: require an appropriate coarser range without excessive unwanted fines.
A grinder advertised for broad use may not provide the precision or workflow required for every method. Verify its intended range.
Domestic vs commercial workload
For home use, consider brewing frequency, noise, footprint and ease of changing between methods. Commercial environments must also assess drinks per day, peak demand, grinding speed, heat, hopper and grounds capacity, duty cycle, cleaning, parts and authorised service.
Doser or on-demand grinding
A traditional doser collects ground coffee before portions are dispensed. On-demand grinders deliver a dose directly for use, helping reduce the time ground coffee waits. The better choice depends on volume, freshness objectives, dose control and the actual bar workflow.
Adjustment and dose control
Stepped adjustment provides defined positions; stepless systems allow very small changes. The practical choice depends on method and user. Timed or programmed dosing can improve repeatability, but dose accuracy should still be checked because bean and grind conditions can change.
Retention and workflow
Retention is coffee that remains within the grinding path. It is influenced by the whole internal design, not burr shape alone. Consider how easily stale grounds can be cleared, how coffee exits the chute and whether the workflow suits single dosing or hopper use.
Cleaning and maintenance
Follow the manufacturer’s method for cleaning hoppers, chutes and burr areas. Do not introduce water into electrical or burr assemblies. Confirm availability of compatible burrs, parts and authorised servicing, especially for commercial use.
